My family will eat deserts faster if I make them personal sized.. I don't know if its because their too lazy to slice off a piece of cake or if its because its easier to grab one in passing.. so I tend to bake most cakes in muffin pans. Today was no exception.. I wanted a pineapple upside down cake to serve with our roasted goose... and they were baked in muffin cups
This is real easy to do.. I used a box of pineapple cake mix.. but yellow cake mix works just as well
I used one large can of chunk pineapple drained
reserve the juice to use in the cake batter
Line your muffin pans with papers, cut some candied cherries in half and place one half in the center of each cup, place about 3 chunks of pineapple on top of cherries.
Melt some butter and mix in brown sugar then sprinkle about a half teaspoon of the sugar mixture over the pineapples.
Fix the cake mix according to pkg directions and spoon over the pineapples/sugar and bake 350 until brown
After cool they can be stored like any regular cup cake
When ready to eat, turn upside down on plate and remove paper
